Ingredients
- 2-3 cloves garlic
- 1 medium onion, roughly chopped
- 1-2 tbsp mixed fresh herbs
- 2 tbsp peanut butter
- 1/4 cup olive oil, more for frying
- 4 half chicken breasts (or 6 boneless & skinless chicken thighs)
- to taste salt
Directions

1In a blender, combine garlic, onion, herbs and peanut butter.

2As you puree the mixture, slowly add just enough olive oil to make a thick and smooth paste.

3Do not let it get too thin.

4Put flour in a shallow bowl, place chicken in another bowl.

5Rub pureed mixture over chicken, then dredge each piece in flour.

6Gently shake off any excess flour, coat again with paste and dredge once more in flour.

7Heat 0.5 cm deep olive oil in a skillet.

8When it's hot, fry chicken for about 4 mins each side, until well browned and cooked through.

9Garnish with lemon wedges.
