  • 8 oz. chicken livers
  • 8 oz. sweet breads
  • 8 oz. sweet Italian sausage
  • 1/4 c. bay leaves
  • 1 c. fresh breadcrumbs
  • 2 eggs
  • salt and pepper
  • 2 c. fine dry breadcrumbs, soaked in milk
  • 8 oz. lean veal, cut into cubes
  • 5 Tbsp. butter
  • 1/4 c. fresh sage leaves
  • 1/2 c. grated Parmesan cheese
  • grated rind of 1/2 lemon
  • grated nutmeg
  • oil for deep frying

Directions

    Cut chicken livers into pieces the size of the veal cubes. Blanch the sweet breads for 5 minutes in boiling water.

    Drain and remove membrane.

    Cut into cubes.
