- 8 thick slices white bread, cut into 4 inch discs
- 8 None fresh basil leaves
- 4.5 oz mozzarella cheese, cut into 1/3 inch slices
- 2 tbsp vegetable oil
- 1/2 cup all-purpose flour
- 1/3 cup Parmesan cheese, freshly grated
- 2 None eggs, lightly beaten
Directions

1Top 4 slices of bread with basil and mozzarella. Top with remaining slices of bread, pressing down to seal.

2In a large nonstick frying pan, heat oil over medium-high heat. Combine flour and Parmesan. Dip sandwiches into flour mixture then beaten eggs. Cook for 3 mins per side, or until golden and crisp. Serve sprinkled with salt.
