  • 15 oz. can black-eyed peas
  • 1 large egg
  • 1/8 tsp. salt
  • 1/4 tsp. pepper
  • 6 heaping Tbsp. self-rising flour
  • 1 1/2 c. chopped onions
  • 1/4 c. vegetable oil

Directions

    Pour peas in bowl; mash well with potato masher.

    Add egg, salt, pepper, flour and onions.

    Mix well.

    Pour oil in skillet and cook on medium heat.

    Drop mixture by heaping tablespoon into hot oil.

    Brown.
