- 6 large peppers (red, yellow and green)
- 2 medium onions
- 1/4 c. olive oil
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. vinegar
Directions

1Cut peppers lengthwise in half.

2Remove seeds.

3Slice lengthwise into one-inch wide strips.

4Cut onions into thick slices.

5Heat oil in skillet.

6Add peppers, onions and garlic. Cook over medium heat for 10 minutes, stirring frequently.

7Cover and simmer 5 to 10 minutes until softened.

8Season with salt, pepper and vinegar, then stir.
