- 3/4 c. flour
- 2 tsp. salt
- 1/2 tsp. pepper
Directions

1Mix ingredients in paper bag.

2Heat in large heavy skillet over medium gas flame (325° to 350° dial setting on controlled burner), 1/4-inch melted shortening.

3Shake in paper bag until each piece is well coated with flour (2 pheasants, cut in serving pieces and skin removed).

4Add pheasants to hot fat and brown well on each side. Cover; reduce flame to simmer (200° to 225° dial setting on controlled burner) and cook until tender, about 40 minutes.

5Remove cover and continue cooking 5 minutes.

6Drain on absorbent paper. Serves 4.
