- 4 or 5 medium potatoes
- 2 small onions
- 2 eggs, beaten
- 1/2 c. diced, cooked ham or other leftover meat
- salt and pepper to taste
- 1 Tbsp. corn oil
- 1/2 c. water
Directions

1Slice unpeeled potatoes.

2Peel and chop onions.

3Put oil in cold skillet and heat to about 300°.

4Scatter potato slices over bottom of skillet.

5Cover and cook about 5 minutes.

6Turn potatoes over and brown other side in covered frypan about 2 or 3 minutes. Uncover, add chopped onions and water.

7Replace cover and cook 3 minutes longer.

8Uncover and add eggs and meat.
-
9Stir until eggs are cooked.

10Serve warm.
