- 3-4 c. cold rice (cooked and cool)
- 1/2 stick butter or margarine
- 1/2 c. chopped onion
- 2 eggs, scrambled
- soy sauce
- chopped celery, peas, cooked carrots, optional
Directions

1Melt butter in frying pan, add onions and any optional veggies.

2Stir and cook until tender.

3Push cooked veggies to side of pan- scramble eggs.

4Put cold cooked rice over top of eggs and veggies. Mix together, frying until warm throughout.

5Add soy sauce to taste.

6Can add cubes of cooked meat!
