- 3 Tbsp. bacon drippings
- 1/2 to 1 c. chopped green onions (tops also)
- 1 c. diced celery
- 1 c. mushrooms (optional)
- 3 c. cooked rice
- 2 Tbsp. soy sauce
- 2 eggs, slightly beaten
- 1/2 lb. crisp bacon, crumbled
Directions

1Fry, drain and crumble bacon.

2Set aside.

3Heat 3 tablespoons bacon drippings in skillet.

4Add onions and celery.

5Cook until tender.

6Add mushrooms, rice and soy sauce.

7Cook 10 minutes on low heat, stirring occasionally.

8Stir in beaten egg and cook only until egg is done.

9Add bacon and mix well.
