- 2 c. cooked brown rice
- 2 celery stalks
- 2 carrot sticks
- 1 small onion
- 1 or 2 eggs
- 2 Tbsp. peanut oil
- 2 Tbsp. soy sauce
Directions

1Chop celery, carrots and onion.

2In large saucepan, break eggs in peanut oil.

3In separate corners of pan, place celery, carrots and onion.

4With spatula, chop egg up and flip as it cooks and stir other vegetables.

5Add rice and soy sauce and mix all together, stirring and flipping until rice is brown.

6Serves 4 to 6.
