- 2 c. cooked long grain white rice
- 2 Tbsp. salad oil
- 1/4 c. onion, chopped *
- 2 Tbsp. green pepper, chopped *
- 1 can sliced mushrooms
- 2 Tbsp. soy sauce
- 3 eggs, beaten
- 1 can water chestnuts, drained and sliced
Directions

1Cook onion and green pepper in oil in large skillet.

2Stir in rice, water chestnuts, mushrooms and soy sauce.

3Cook over low heat for 10 minutes.

4Stir in beaten eggs; cook and stir 2 to 3 minutes.

5Makes 4 to 5 servings.
