Ingredients
- 3 to 4 c. steamed rice
- 1 lb. ground beef
- 2 carrots, diced
- 3 Tbsp. soy sauce
- 1 medium onion
- 1/2 c. frozen peas, thawed
- 1 Tbsp. vegetable oil
- 2 eggs
- salt and pepper to taste
- scallions, sliced (to garnish)
Directions

1In a wok or deep skillet on medium heat, fry ground beef until light brown.

2Add onion and carrots. Cook about 5 minutes.

3Add cooked rice, green peas, soy sauce, salt and pepper.

4Mix thoroughly.

5Cook another 5 minutes.

6Transfer into serving dish. Beat eggs and fry in medium-hot pan, moving side to side to make a thin layer.

7Remove from pan; dice and sprinkle on top of rice. Garnish with chopped scallions.
