Ingredients
- 2 c. diced meat (leftover beef, turkey, chicken or pork)
- 1 medium onion, chopped
- 1 c. celery, chopped on angle
- 1 1/2 c. boiled rice
- 3 slices bacon
- 4 Tbsp. soy sauce
- 1 tsp. pepper
- 1/2 c. green pepper, chopped
- 1/2 c. red pepper, chopped
- 2 Tbsp. cooking oil
- 2 eggs, beaten
- 1 tsp. ginger
- 1 tsp. garlic powder
Directions

1In a large heavy frypan or wok, heat oil and brown meat slightly.

2Push aside and saute vegetables a few minutes.

3Remove from pan.

4Chop bacon and brown until crisp.

5Scramble eggs and remove from pan.

6Add rice, sorta sear.

7Keep stirring until rice is all seared.

8Add meat, eggs and bacon and season with spices. If too dry, add 1/2 cup of water and soy sauce.

9Be sure to stir up well.

10Too much soy will make it salty, more can be added at the table according to taste.
