  • 2 Tbsp. cooking oil
  • 1 c. uncooked rice
  • 1 envelope onion soup mix
  • 2 1/2 c. water
  • 1 Tbsp. soy sauce
  • 2 beaten eggs
  • 2 chopped green onions (including tops)

Directions

    Heat oil in large skillet, then saute rice until golden.

    Add soup mix, water and soy sauce.

    Cover and simmer 30 to 35 minutes or until water is absorbed.

    Add onions.

    In another pan, scramble eggs.

    Add eggs to rice and serve.
