- 2 egg whites
- 1/2 egg yolk
- 1 Tbsp. + 1 tsp. olive oil
- 3 green onions, cut in 1/4 pieces
- 1/4 c. cooked chicken, diced, shrimp, turkey or combination
- 3 c. boiled rice (cold)
- 1 Tbsp. soy sauce
- 1/4 tsp. sugar
Directions

1Beat egg whites and yolk together.

2In a small skillet, scramble eggs in 1 tablespoon of the olive oil.

3Set aside.

4In a large skillet, saute green onions in the remaining teaspoon oil. Add rice and mix thoroughly.

5Stir in soy sauce and sugar.
