Ingredients

  • 3 cups cold cooked rice
  • 4 tablespoons bacon fat
  • 1/4 cup smoked ham (diced)
  • 1/4 cup water chestnuts sliced
  • 1/4 cup bamboo shoots
  • 1/4 cup celery chopped
  • 1/4 cup sliced green onions (with tops)
  • 1/2 cup mushrooms (drained) or fresh
  • 1/2 cup frozen peas
  • 1 egg
  • 1 to 2 tablespoons soy sauce

Directions

    Heat bacon fat in frying pan. Fry ham until brown. Add mushrooms, celery, water chestnuts, bamboo shoots, and peas and cook 3 minutes. Add slightly beaten egg, cook. Stir in rice and green onions. Add soy sauce.

    Any left over vegetables may be added.
