- 3 cups cold cooked rice
- 4 tablespoons bacon fat
- 1/4 cup smoked ham (diced)
- 1/4 cup water chestnuts sliced
- 1/4 cup bamboo shoots
- 1/4 cup celery chopped
- 1/4 cup sliced green onions (with tops)
- 1/2 cup mushrooms (drained) or fresh
- 1/2 cup frozen peas
- 1 egg
- 1 to 2 tablespoons soy sauce
Directions

1Heat bacon fat in frying pan. Fry ham until brown. Add mushrooms, celery, water chestnuts, bamboo shoots, and peas and cook 3 minutes. Add slightly beaten egg, cook. Stir in rice and green onions. Add soy sauce.
