Ingredients
- 2 stalks green onion, chopped
- 1 medium yellow onion, chopped
- 1 carrot, diced
- 2 eggs, scrambled
- 1 c. cooked chopped beef, pork or ham
- La Choy soy sauce
- about 4 c. cooked white rice
- vegetable oil
- salt and pepper
Directions

1First cook eggs in hot frying pan sprayed with Pam.

2Turn over and cook slightly until done.

3Put on plate and chop into little pieces; set aside.

4Heat about 2 tablespoons oil in wok or frying pan and cook each vegetable separately until brown and hot.

5Take out of wok and set aside.

6Add about 1 or 2 tablespoons of oil in wok and brown desired choice of meat.

7Add cooked vegetables, eggs and white rice to browned meat.

8Add desired amount of salt and pepper and mix thoroughly; may have to add about 2 to 3 tablespoons of oil to rice mixture.

9Mix together well.

10Add desired amount of soy sauce; mix well and serve.
