- 2 Tbsp. olive oil
- 1 lb. boneless chicken breast (or pork)
- 1 Tbsp. grated ginger
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 Tbsp. dried chives
- 2 small cans mushrooms
- 2 eggs
- 1/3 c. soy sauce
- 1 Tbsp. sesame seed
- 4 c. cooked rice
Directions

1Cut meat into bite-size pieces and in large pan brown in olive oil.

2Add ginger, onion, garlic and chives.

3Stir-fry until onions are tender-crisp.

4Add mushrooms and soy sauce.

5Push to one side of pan and break eggs in empty side, scrambling them.

6Add rice and sesame seed and heat 2 minutes, stirring constantly.
