Ingredients
- 3 Tbsp. peanut oil
- 2 eggs, beaten
- 1 small onion, diced
- 1 clove garlic, minced
- 1/2 c. diced, cooked ham or pork
- 4 c. cold, cooked rice
- 1 Tbsp. soy sauce
- salt and pepper to taste
Directions

1Cook scrambled eggs in 1 tablespoon of oil; set aside.

2Put remaining 2 tablespoons of oil into very hot skillet or wok and heat.

3Fry onion and garlic until golden brown.

4Add ham; stir continuously and cook until ham is heated through.

5Add eggs.

6Stir well.

7Add rice, soy sauce, salt and pepper.

8Cook until rice is heated.

9Serve hot.
