Spanish Rice

Ingredients

  • 1 lb. ground beef or ground turkey
  • 1/4 c. chopped celery
  • 2 1/2 c. stewed tomatoes
  • 1 (6 oz.) can tomato paste
  • salt to taste
  • 1/2 bay leaf
  • dash of cayenne pepper
  • 2 c. hot water
  • 3/4 c. green pepper
  • 1 tsp. chili powder
  • 1 tsp. sugar
  • 1 (10 1/2 to 11 oz.) can beef bouillon
  • 1 1/2 c. long grain rice

    Brown meat in large frying pan.

    Drain fat.

    Add celery, tomatoes, tomato paste, water, seasonings, green pepper, bouillon and rice.

    Simmer 10 minutes.

    Put mixture into 3-quart baking dish.

    Bake in 350° oven for 35 minutes.

    Add water or tomato juice if necessary.

    Stir occasionally.
