  • 5 whole Shiitake Mushrooms
  • 3 whole Scallions
  • 1 can Pineapple (8 Oz)
  • 1 whole Carrot, Small
  • 1 teaspoon Sesame Oil
  • 2 cloves Garlic, Minced
  • 1/2 teaspoons Ginger, grated
  • 3 cups Rice, Cooked, Leftover From Delivery Or Chilled
  • 2 teaspoons Raisins
  • 1/2 cups Edamame, Shelled
  • 1 Tablespoon Soy Sauce

    Chop the mushrooms, scallions, pineapple, and matchstick the carrots.

    On medium heat warm up sesame oil, saute garlic, ginger and scallions for 1 minute until fragrant. Add mushrooms cook for 2 more minutes until slightly softened. Add rice, raisins, pineapple, carrots, edamame and 1 Tablespoon of soy sauce. Cook for about 5 minutes or until the vegetables become soft and the rice starts sticking to the pan.
