Ingredients
- 2 cups cold boiled rice
- 12 teaspoon salt (less if using bacon)
- 4 ounces bacon or 4 ounces pork or 4 ounces chicken, diced or thinly sliced
- 2 spring onions, finely sliced
- 2 eggs
- 1 carrot
- 2 -3 tablespoons dark soya sauce (to taste)
Directions

1Heat pan with a little oil.

2Beat eggs& cook 2-3 ommelettes from mixture.

3Roll these up& cut into thin slices, set aside.

4Add a little more oil to pan& stir fry meat of choice til just cooked.

5Add rice& salt, stir frying for about 5 minutes or until hot.

6Add grated carrot& stir through.

7Add soya sauce to taste.

8Lastly garnish with spring onions& sliced egg.

9Eat& enjoy.
