Ingredients
- 1 cup rice
- 6 cups water
- 3 tablespoons butter
- 1/2 cup finely chopped onions
- 1/4 cup slivered blanched almonds
- 1/2 cup finely chopped green pepper
- 1/2 cup finely diced, thinly sliced cooked ham
- Salt to taste if desired
- Freshly ground pepper to taste
Directions

1Rinse and drain the rice.

2Bring the water to the boil and add the rice.

3Let boil until rice is tender, about 17 minutes.

4Drain thoroughly.

5Meanwhile, heat 2 tablespoons butter in a heavy saucepan and add onions and almonds.

6Stir and cook until mixture is lightly browned.

7Add green pepper and ham and cook, stirring, about 5 minutes.

8Add the rice to the green pepper mixture and stir in remaining one tablespoon butter, salt and pepper.

9Stir to blend well.

10Cook 5 minutes, stirring.
