- 6 Tbsp. vegetable oil
- 3 eggs, beaten
- dash of salt
- 1/2 c. chopped onion
- 1/4 lb. mushrooms
- 3 c. cooked, cold rice
- soy sauce to taste
Directions

1Heat 1 tablespoon of oil in skillet.

2Add eggs and salt.

3Fry until firm.

4Remove to plate.

5Cut into strips and reserve.

6Heat remaining 5 tablespoons of oil in skillet.

7Add onion and mushrooms.

8Saute just until tender and crisp.

9Add rice.
-
10Cook over low heat, stirring constantly, until heated through.

11Stir in soy sauce and eggs.

12Taste.

13Add more soy sauce, if desired.
