Ingredients
- 2 eggs
- 1/8 tsp. white pepper
- 1/4 c. soy sauce
- 1/4 c. vegetable oil
- 1 slice ginger, minced
- 1 clove garlic, minced
- 4 c. cooked rice
- 4 scallions, chopped
- 2 c. diced cooked meat (use ham, chicken, pork, shrimp, steak, whatever)
- 1/2 c. chopped mushrooms
Directions

1Place eggs, pepper and soy sauce in small bowl.

2Stir slightly and set aside.

3Heat wok or pan hot and dry.

4Add oil.

5Brown garlic and ginger slightly, then add rice.

6Cook 2 to 3 minutes, stirring to break up lumps.

7Add meat and vegetables.

8Fry and stir constantly until thoroughly heated.

9Add the egg mixture while stirring rice so it will cover as much as possible.

10Stir constantly while cooking until egg mixture begins to firm, about 2 minutes.

11Serve hot.
