Fried Rice-Style Quinoa

Ingredients

  • 1 cup quinoa uncooked
  • 2 tablespoons canola oil divided
  • 3/4 cup egg whites
  • 1 1/2 cups frozen mixed vegetables thawed
  • 1/3 cup green onions chopped
  • 3 tablespoons low sodium soy sauce
  • 1/2 teaspoon Sriracha hot chile sauce, optional

    Cook quinoa according to package directions; cook 10 mins.

    Meanwhile, cook eggs in 1 TBS hot oil in large nonstick skillet over medium-high heat, stirring often, 2 minutes or just until set. Remove from the skillet.

    Add remaining 1 TBS oil to skillet; heat 1 minute. Cook vegetables, quinoa and green onion in hot oil, stirring often, 4-5 minutes or until vegetables are tender and quinoa is slightly browned.

    Stir in soy sauce and Sriracha, if desired. Stir in eggs.

    Divide mixture evenly among 4 containers.

    Note: Cook the quinoa up to 2 days ahead and refrigerate until needed, if desired.
