Fried Rice with Carrots

Ingredients
- 1 medium onion (finely chopped)
- 2 garlic cloves (finely chopped)
- 1 carrot (peeled and grated)
- 1/4 tsp Salt
- 3 cup of boiling water
- 3 tbsp olive oil
- 1 cup of rice
Directions

1Heat the olive oil on a medium to high heat in a saucepan.

2Next add the onion and garlic and brown.

3Takes about 3-4 minutes.

4Reduce heat to medium.

5Add the rice to the saucepan.

6Continously stirring for about 4-5 minutes.

7Add one cup of water and stir.
-
8Cook for another 5 minutes.

9Then add the grated carrot, salt and 1 more cup of water and stir.

10Cook for about another 5 minutes and add the last cup of water.

11Let the liquid cook down and let the rice rest for 5-10 minutes.

12Check seasoning and serve.
