Fried Rice with Carrots

Ingredients

  • 1 medium onion (finely chopped)
  • 2 garlic cloves (finely chopped)
  • 1 carrot (peeled and grated)
  • 1/4 tsp Salt
  • 3 cup of boiling water
  • 3 tbsp olive oil
  • 1 cup of rice

Directions

    Heat the olive oil on a medium to high heat in a saucepan.

    Next add the onion and garlic and brown.

    Takes about 3-4 minutes.

    Reduce heat to medium.

    Add the rice to the saucepan.

    Continously stirring for about 4-5 minutes.

    Add one cup of water and stir.

    Cook for another 5 minutes.

    Then add the grated carrot, salt and 1 more cup of water and stir.

    Cook for about another 5 minutes and add the last cup of water.

    Let the liquid cook down and let the rice rest for 5-10 minutes.

    Check seasoning and serve.
