Fried Shrimp Batter

Ingredients

  • 1 c. flour
  • 1/2 tsp. sugar
  • 2 Tbsp. oil
  • 1 egg, beaten
  • 1 c. ice water
  • salt and cayenne pepper to taste (optional)
  • 2 lb. peeled, deveined and split shrimp
  • oil for frying

Directions

    Combine all ingredients, except shrimp and oil, for frying. Beat well.

    Place in refrigerator for 30 minutes.

    Dry shrimp thoroughly on paper towels and dip in batter.

    Fry in hot oil at 375° until golden brown; drain on paper towels or drain in fish drainer.
