Fried Shrimp Batter

- 1 c. flour
- 1/2 tsp. sugar
- 2 Tbsp. oil
- 1 egg, beaten
- 1 c. ice water
- salt and cayenne pepper to taste (optional)
- 2 lb. peeled, deveined and split shrimp
- oil for frying
Directions

1Combine all ingredients, except shrimp and oil, for frying. Beat well.

2Place in refrigerator for 30 minutes.

3Dry shrimp thoroughly on paper towels and dip in batter.

4Fry in hot oil at 375° until golden brown; drain on paper towels or drain in fish drainer.
