  • 1 lb. small fresh shrimp, cleaned
  • 3/4 c. fine corn flake crumbs
  • 2 1/2 Tbsp. dry onion soup mix
  • 2 Tbsp. parsley
  • 2 Tbsp. grated Parmesan cheese
  • 2 eggs, beaten
  • 1/3 c. shortening

    Clean shrimp, rinse and pat dry.

    Combine crumbs, soup mix, parsley and cheese.

    Dip shrimp into egg, drain well.

    Coat shrimp lightly with crumbs.

    Melt shortening in a large heavy skillet over medium heat.

    Fry shrimp in a single layer for 3 minutes per side or until brown.
