- 1 lb. small fresh shrimp, cleaned
- 3/4 c. fine corn flake crumbs
- 2 1/2 Tbsp. dry onion soup mix
- 2 Tbsp. parsley
- 2 Tbsp. grated Parmesan cheese
- 2 eggs, beaten
- 1/3 c. shortening
Directions

1Clean shrimp, rinse and pat dry.

2Combine crumbs, soup mix, parsley and cheese.

3Dip shrimp into egg, drain well.

4Coat shrimp lightly with crumbs.

5Melt shortening in a large heavy skillet over medium heat.

6Fry shrimp in a single layer for 3 minutes per side or until brown.
