- 3 medium potatoes
- 12 large onion
- 2 cups eggplants
- 1 large carrot
- 1 bell pepper, sliced any color
- 12 cup asiago cheese
Directions

1Peel and cube an eggplant.

2I use about 3/4 of one in this recipe, Place the eggplant in a colander and add salt to remove water.

3After about an hour rinse the eggplant and squeeze dry.

4Place 2 Tablespoons of Olive Oil in a skillet and bring to a medium temperature.

5Add thinly slice potatoes, onion, carrot, peppers, and egg plant to the skillet.

6Cook until done.

7Serve hot and we like this recipe with Asiago Cheese.
