- 4 medium tilapia fillets
- 2 eggs
- 2 Tbs mayonaise
- 1 C breadcrumbs
- 1 Tbs onion powder
- 2 tsp dry mustard
- 1/4 tsp cayenne
- 1 Tbs garlic powder
- 1 Tbs Old Bay seasoning
- salt and pepper
- 1/4 C oil for frying
- 1 Tbs butter
Directions

1In a pie plate, lightly beat eggs with mayonnaise.

2Combine dry ingredients (bread crumbs, onion powder, mustard, cayenne, garlic powder, Old Bay, and S&P) in another pie plate.

3Over medium-high heat, heat oil and butter in a large, heavy skillet.

4Dip fish in egg mixture, then dredge through bread crumbs.

5Place in hot oil and fry until done, 2-3 minutes per side or until fish flakes easily. Serve Immediately
