Fried Zucchini Chips

- 1 lb zucchini
- 1 egg beaten
- 1 tsp water
- 1 cup flour
- 1 Panko bread crumbs
- 1 vegetable oil for frying
Directions

1Heat oil to 350F and drop coated rounds in oil.

2Do not crowd.

3Turn over when brown on one side.

4Continue until all are cooked.

5Beat egg and water together well.

6Slice zucchini in 1/4 to 1/2 inch rounds.

7Dredge in flour.

8Dip rounds in egg wash mixture and then in panko bread crumbs.

9Separate rounds and make sure they are evenly coved with crumbs.

10I press down to make sure they adhere well.

11You can add salt while still hot if you choose.

12I deep fry mine but can pan fry.

13Can use pickles, squash or eggplant in place of zucchini.

14Even string cheese for cheese sticks.
