- 1/2 lb. ground chicken
- 1/2 lb. ground veal
- 6 Tbsp. bread crumbs
- 2 large eggs
- 1 c. heavy cream
- 1 tsp. salt
- 1/2 tsp. pepper
- 4 c. chicken broth
- 2 Tbsp. flour
- 1 1/2 tsp. sugar
- 1 Tbsp. lemon juice
Directions

1Thoroughly mix chicken, veal, bread crumbs, unbeaten eggs, 2 tablespoons cream, salt and pepper.

2Using 1 tablespoon, make into meatballs.

3In a large saucepan, bring chicken broth to a boil. Add meatballs, a few at a time.

4Cook about 15 minutes.

5Remove with a slotted spoon.

6When all meatballs are cooked, strain broth. Remove 1 1/2 cups broth for gravy.

7Reserve any for another use. Gradually whisk broth with flour, keeping smooth, then whisk in cream, sugar and lemon juice.

8Cook over moderate heat, stirring constantly, until thickened and boiling.

9Reheat the meatballs in the sauce.

10Sauce will be on the thin side and delicately flavored. Best when served over wide noodles.
