- 1 medium onion, chopped
- 12 cup chopped mushroom
- 3 tablespoons vegetable oil
- 7 eggs
- 13 cup milk
- 2 cloves garlic, minced
- 2 teaspoons dried oregano or 2 teaspoons italian seasoning
- 1 teaspoon parsley flakes
- 12 teaspoon salt
- 12 teaspoon pepper
- 12 cup shredded mozzarella cheese (2 ounces)
- 14 cup grated parmesan cheese
- 8 ounces mild Italian sausage, cooked and crumbled
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 12 cup shredded mozzarella cheese
- 14 cup parmesan cheese
Directions

1Saute onion and mushrooms in oil until tender; set aside.

2Combine eggs and milk; beat well.

3Add garlic, oregano, parsley, salt and pepper, beating well.

4Stir in reserved onion mixture, 1/2 cup Mozzarella cheese, 1/4 cup Parmasan cheese, sausage and spinach.

5Pour mixture into a buttered 9-inch square baking dish; sprinkle with remaining cheeses.

6Bake at 350 degrees for 35 to 40 minutes or until set.
