  • 1 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs, beaten
  • 1/3 c. milk
  • 5 c. thinly sliced okra
  • vegetable oil

Directions

    Combine first 3 ingredients in a medium bowl.

    Combine eggs and milk; add to dry ingredients and mix until smooth.

    Stir in sliced okra.

    Carefully drop batter by tablespoonfuls into deep hot oil (375°); cook only a few at a time, turning once.

    Fry 2 to 3 minutes or until fritters are golden brown.

    Drain well on paper towels.
