Frozen Pineapple Delight

Ingredients

  • 2 c. vanilla wafer crumbs
  • 1/4 c. melted butter
  • 1/2 c. 10x sugar
  • 1/2 c. very soft butter
  • 1/2 pt. whipping cream
  • 1 large can crushed pineapple
  • 3 eggs
  • 1 tsp. vanilla
  • 1 jar maraschino cherries (optional)

Directions

    Press together the first 2 ingredients in a 9 x 12-inch pan and keep 1/2 out for top.

    Cream your 1/2 cup soft butter; add 10x sugar.

    Beat well.

    Add eggs, one at a time; beat until smooth. Add vanilla and spread on crumbs in pan.

    Whip cream until stiff; add well drained pineapple and cherries.

    Spread over mixture in pan.

    Add rest of crumbs and put in freezer.

    Remove 1 hour before serving.
