  • 1 box (10 Oz. Box) Orginial Plain Couscous (Near East Brand)
  • 1 cup Water
  • 1 cup Apple Juice
  • 3 whole Medjool Dates, Diced
  • 3 Tablespoons Crystallized Ginger, Finely Chopped
  • 1/2 cups Dried Cranberry And Nut Mixture (cranberry Trail Mix Would Work)
  • 1/4 cups Apricot Preserves
  • 1/4 cups Honey, Save A Little To Drizzle On The Top.

    1. Prepare couscous according to package instructions using 1 cup of water and 1 cup of apple juice as the liquid.

    2. While couscous is cooking, chop the dates and ginger.

    3. Move the cooked couscous to a large bowl when done. While it's still warm, add the dates, ginger, cranberry nut mixture, honey and apricot preserves. Gently stir until well combined.

    4. Serve warm with a drizzle of honey.
