Ingredients
- 1 pound candied pineapple
- 1 pound candied cherries
- 1 pound pecans (4 cups)
- 2 tsp. vanilla extract (pure, not imitation)
- 2 cups sugar
- 3/4 pound (or 3 sticks) butter (or margarine)
- 4 cups plain cake flour
- 2 tsp. baking powder
- 6 eggs
- 3/4 cup bourbon (may substitute frozen orange juice concentrate)
Directions

1mix eggs, sugar, bourbon, vanilla, butter and baking powder - blend well.

2Mix chopped candied fruit and nuts together and pour plain flour over fruit and nuts and dredge until each piece is coated with flour.

3Then pour mixed liquid over floured fruit and nuts and mix well.

4Pour mixture into greased pan and bake for 3 hours in

5250 degrees oven.

6Place pie pan filled with water on lower rack in oven to keep cake moist while baking.

7Cool before removing from pan.
