  • 1 lb. butter or oleo
  • 3 c. white sugar
  • 6 egg yolks
  • 2 oz. bottle lemon extract
  • 3 Tbsp. wine or fruit juice
  • 3 c. flour
  • 1 tsp. soda
  • 1 lb. white raisins
  • 8 oz. candied cherries
  • 8 oz. candied pineapple
  • 1 qt. pecans
  • pinch of salt
  • 2 c. flour

Directions

    Cream butter and sugar; add lemon extract and wine or fruit juice.

    Combine flour and soda.

    Coat fruit and pecans with flour mixture; add butter and sugar mixture.

    Add six egg whites, which have been stiffly beaten.

    Bake at 300° for about 1 1/2 hours. Makes 3 loaf pans.
