- 1 (No. 2 1/2) can fruit cocktail
- 1/2 c. melted butter
- 1 pkg. lemon pudding
- 3/4 c. sifted flour
- 1/4 tsp. baking soda
- 1/2 c. shredded coconut
- 2 eggs plus 1/4 c. sugar for meringue
- 3/4 c. coarse soda cracker crumbs
- 1/2 c. well-packed brown sugar
Directions

1Drain fruit cocktail, chill.

2Make pudding, fold in meringue. Add 1/2 cup drained fruit; cool.

3Mix crumbs and brown sugar; add melted butter.

4Sift flour with soda.

5Combine with coconut; mix well with cracker mixture.

6Put 3/4 of this mixture in well-greased round 9 x 1 1/2-inch baking dish.

7Pour lemon filling on top.

8Sprinkle with remaining crumbs.

9Bake in moderate oven at 350° for 25 minutes or until golden brown.

10Use rest of fruit over pudding when cold.
