- 1 medium acorn squash (about 1 lb.)
- 2 oz. dried apricot halves (about 6 whole)
- 1 Tbsp. raisins
- 2 Tbsp. apricot preserves
- 1 tsp. water
- dash of salt
- 1 Tbsp. sliced almonds, toasted
Directions

1Cut squash in half lengthwise; discard seeds and membrane. Place squash, cut side down, in a vegetable steamer.

2Arrange apricots around squash.

3Place steamer over boiling water in a Dutch oven.

4Cover and steam 15 minutes or until squash is crisp-tender.

5Coarsely chop apricots.

6Combine chopped apricots, raisins and next 3 ingredients.

7Spoon evenly into each squash half.

8Cover and steam 5 minutes or until squash is tender. Sprinkle with toasted almonds.
