- 4 eggs, lightly beaten
- 1/2 c. sugar
- 1/4 tsp. salt
- 1/4 tsp. vanilla
- 2 c. milk
- 1 c. grated nuts
- choice of fresh fruit
Directions

1Preheat oven to 300°.

2In a bowl, combine eggs, sugar, salt and vanilla.

3In a small saucepan, allow milk to barely simmer. Pour into egg mixture and stir.

4In 8 small ramekins, sprinkle bottoms evenly with grated nuts.

5Pour mixture into ramekins and put them in a baking pan with 1-inch hot water.

6Bake 50 to 60 minutes.

7Test for doneness by inserting a knife blade in middle of flan.

8The blade should come out clean.

9Unmold the flans into glass dessert dishes.

10Top with fresh fruit, such as small grapes, strawberries, raspberries, blueberries, sliced passion fruit or blackberries.

11Serves 8.
