Fruit Glazed Salmon

  • 4 whole Salmon Fillets (about 8 Oz. Each)
  • 2 Tablespoons Oil, Divided
  • 1 clove Garlic, Minced
  • 1 cup Jelly Or Jam, Any Flavor
  • 2 Tablespoons Orange Juice, Or 1/2 Lemon, Juiced
  • 1/2 cups Water
  • Salt And Pepper

    Preheat oven to 400 F.

    Place fillets (if skin on, lay them skin side down) on lightly oiled foil or baking sheet.

    Sprinkle fillets with 1 tablespoon oil, salt and pepper.

    In a small pot, heat the remaining 1 tablespoon of oil, and saute garlic until it begins to soften.

    Add jelly/jam, lemon/orange juice and water.

    Stir to combine and simmer and reduce for 2 minutes.

    When jam mixture is cool, brush over salmon fillets and place in the oven.

    Bake for 4 minutes.

    Brush more jam on the fillets, turn up oven to broil and bake for another 3 minutes.

    Note: salmon is done when you see a white substance secreting fom it.
