Fruit Loaf with Philly

Ingredients

  • 1/2 cup raisins
  • 1/2 cup dried apricots, chopped
  • 1/2 cup pitted dates, chopped
  • 1/3 cup caster sugar
  • 2 tablespoons reduced salt, low fat canola spread
  • 1 teaspoon mixed spice
  • 1 teaspoon cinnamon
  • 1 cup boiling water
  • 1 3/4 cups SR wholemeal flour
  • 1 teaspoon bicarbonate of soda
  • 1/2 cup reduced fat milk
  • 1 tablespoon glace ginger, chopped
  • 125g tub PHILADELPHIA Light Spreadable Cream Cheese

Directions

    Combine raisins, apricots, dates, sugar, canola spread and spices in a large bowl.

    Pour boiling water over, and allow to sit for 5 minutes.

    Sift the flour and bi-carb into the fruit mixture, and add the milk and ginger.

    Mix well.

    Spoon into a lined 18 x 8 cm loaf tin and bake at 180 degrees C fan-forced for 55-60 minutes.

    Remove from tin and cool on a wire cooling rack.

    Spread Philly* over slices of loaf and enjoy!
