Ingredients

  • 1 refrigerated roll sugar cookies
  • 11 oz. softened cream cheese
  • 1/2 c. sugar
  • 1/4 tsp. vanilla
  • 4 types fresh fruit (kiwi, peaches, bananas, etc.)
  • 1/2 jar apricot preserves
  • 4 Tbsp. water
  • 7 c. flour
  • 2 c. sugar
  • 5 tsp. baking powder
  • 3 beaten eggs
  • 1 c. milk
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 2 tsp. nutmeg
  • 1 lb. lard
  • 1 c. currants, rinsed and drained

Directions

    Mix all the ingredients into a dough; add 1 cup currants, rinsed and drained, and work into dough.

    Roll out on a floured board; cut into 2 1/2 or 3 inch circles.

    Fry on lightly greased electric frypan or griddle at 350°.

    Fry until cookies puff up and look shiny, then turn over and cook until finished.
