  • 1 (8 oz.) can pineapple chunks (juice pack)
  • 2 c. shredded cabbage
  • 2/3 c. chopped apple
  • 1/2 c. shredded carrot
  • 1/4 c. chopped green pepper
  • 1 Tbsp. cooking oil
  • 1 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 1/8 tsp. ground ginger or 1/4 tsp. grated ginger root

    Drain pineapple chunks, reserving 2 tablespoons juice.

    In a large salad bowl, combine pineapple, cabbage, apple, carrot and green pepper.
