  • 2 None eggs
  • 1/2 cup granulated sugar
  • 1/2 cup pastry flour
  • 3/4 tsp baking powder
  • 2 tsp cornstarch
  • 1 tsp butter, mixed with 2 tbsp boiling water
  • 1 (28 oz) can peach slices, drained

Directions

    Preheat oven to 350°F. Whisk eggs until frothy. Gradually add sugar and whisk until thick and pale. Sift flour, baking powder and cornstarch then fold in. Add butter water mixture. Place peaches in a large casserole dish then cover with batter. Bake for 25-30 mins, until springy when touched lightly.
