Fruit Strudel

Ingredients
- 1 1/2 c. apples, peeled, cored and diced
- 1 1/2 c. pears, peeled, cored and diced
- 1 c. fresh apricots, cored, diced, drained and rinsed
- 1/3 c. seedless raisins
- 6 phyllo sheets
- 1/4 c. brown sugar, packed
- 1 Tbsp. vanilla
- 4 Tbsp. Molly McButter
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
Directions

1Preheat oven to 350°.

2Spray cookie sheet with nonstick spray. In a medium bowl, combine all ingredients except phyllo sheets. Spread mixture on prepared cookie sheets.

3Bake at 350° for 20 to 25 minutes until fruit is tender.

4Cool completely.

5Increase oven temperature to 400°.

6Layer three phyllo sheets on top of one another.

7Spoon one-half mixture along the edge of the phyllo. Roll phyllo jelly roll fashion and place on cookie sheet prepared with nonstick spray.

8Spray strudel with spray to prevent drying. Score top of strudel with 7 diagonal cuts.

9Do not cut all the way through.

10Repeat process for second strudel.

11Bake for about 10 minutes.

12Yields 2 strudels, 8 servings.
