Fruit Strudel

  • 1 1/2 c. apples, peeled, cored and diced
  • 1 1/2 c. pears, peeled, cored and diced
  • 1 c. fresh apricots, cored, diced, drained and rinsed
  • 1/3 c. seedless raisins
  • 6 phyllo sheets
  • 1/4 c. brown sugar, packed
  • 1 Tbsp. vanilla
  • 4 Tbsp. Molly McButter
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg

Directions

    Preheat oven to 350°.

    Spray cookie sheet with nonstick spray. In a medium bowl, combine all ingredients except phyllo sheets. Spread mixture on prepared cookie sheets.

    Bake at 350° for 20 to 25 minutes until fruit is tender.

    Cool completely.

    Increase oven temperature to 400°.

    Layer three phyllo sheets on top of one another.

    Spoon one-half mixture along the edge of the phyllo. Roll phyllo jelly roll fashion and place on cookie sheet prepared with nonstick spray.

    Spray strudel with spray to prevent drying. Score top of strudel with 7 diagonal cuts.

    Do not cut all the way through.

    Repeat process for second strudel.

    Bake for about 10 minutes.
