  • 1 (3 lb.) boneless pork roast
  • 1/2 c. apricots, dried
  • 1/2 c. prunes, pitted
  • 2 pears
  • 1/4 c. apricot preserves
  • 2 Tbsp. Dijon mustard
  • 3 Tbsp. margarine
  • 2 Tbsp. brown sugar
  • 1/2 tsp. ground cinnamon
  • 2 red apples (cooking)

    Cut pork loin lengthwise in 1/2, but not all the through. Open and spread flat.

    Arrange apricots and prunes down center. Fold pork in original shape.

    Secure with toothpicks.
