- 1/2 c. apricots, dried
- 1/2 c. prunes, pitted
- 2 pears
- 1/4 c. apricot preserves
- 2 Tbsp. Dijon mustard
- 3 Tbsp. margarine
- 2 Tbsp. brown sugar
- 1/2 tsp. ground cinnamon
- 2 red apples (cooking)
Directions

1Cut pork loin lengthwise in 1/2, but not all the through. Open and spread flat.

2Arrange apricots and prunes down center. Fold pork in original shape.

3Secure with toothpicks.
