  • 3 tablespoons powdered gelatin
  • 1/2 lemon
  • 2 1/8 cups blueberry juice or other fruit juice
  • 6 3/4 tablespoons champagne or white wine
  • 1 cup sugar
  • 2 3/4 cups strawberries fresh

Directions

    Heat the lemon juice, blueberry juice, champagne, and sugar in a saucepan until the sugar dissolves. Remove from heat and stir in the gelatin powder until dissolved.

    Refrigerate until it begins to set, approximately 2 hours. Pour into a mold along with the berries and refrigerate overnight.

    Run the outside of the mold under hot water to loosen and turn out onto a serving platter.
